making dual boot and mirrored system

I have an old server that I was given it was configured so the OS was on 2 mirrored drives. after having to reload the OS, and deciding to try something new I want to make it a mirrored setup. I also want to be able to do a dual boot of some other OS. I know you can't dual boot off dynamic disks (though I don't understand why that is). and you can't make raid setups without dynamic disks. I have been looking for freeware raid programs that will do this, but have yet find anything other than 2 programs that are from like $50-$90 to buy. i'm having a hard time finding anything when I search for raid or mirroring software for windows. 95% of results talk about the built in raid.

I have another system I did an upgrade on from 2000 server to 03. after completing upgrade I could still dual boot to 2000 even after I made disk dynamic and mirrored it. suspect because upgrade though, but also have hard time believing that dynamic can't be dual booted. but what I learned in a few of my college classes, and like all the MS documentation. not sure what the other OS would be, but possibly a Linux so no way to do upgrade and use that way.

any ideas on freeware raid or mirroring software? or if this dynamic disk dual booting thing is accurate. I'd try it, but once dynamic no choice but clone and redo that disk. I have a raid card too, but fairly certain only does like RAID 2,3,5.
